Chicken rice with sauce

Ingredients

  • 1 cup of rice (Basmati or brown rice), drained and rinsed
  • 90 g of cut chicken , 1 teaspoon of mustard, paprika and cumin
  • Olive oil or vegetable butter
  • For the sauce:
  • ½ grated courgette, Thin slices of a ½ onion , ½ chopped pepper ,Olive oil or vegetable butter, 1 medium-sized tomato ,2 cloves of garlic , thyme , 2 bay leaves ,salt ,black pepper ,paprika , 1 tbsp of canned tomatoes, 1 cup of water .

Preparation steps

  • 1. Put the cut chicken in a large bowl and add the mustard, olive oil, paprika, cumin. Mix everything and let it marinate in the fridge
  • 2. Fry the rice in a hot buttered saucepan , over medium heat, for 4 to 5 minutes. Then add 2 glasses of hot water and cook for 10 to 30 minutes over medium-low heat (depending on the type of rice)
  • 3. In a buttered pan, put the sliced onion, with salt and pepper, to cook for 4 to 5 minutes over medium heat.Then add the chopped pepper, garlic, thyme, bay leaves, salt, black pepper and paprika
  • 4. Let it simmer for a bit, then add a blended tomato, a tbsp of canned tomatoes, then cover the pan and let it cook over low heat
  • 5. Cook you chicken in another pan, then put it in the sauce
  • 6. Time to serve, Enjoy .
