Ingredients
- 1 glass of coral lentils
- 250 g chicken breast, cut into pieces
- 2 medium carrots cut into pieces
- ½ medium courgette, cut into pieces
- 1 medium-sized onion, cut into pieces
- 1 medium tomato cut into pieces
- 4 cloves of garlic
- 2 tbsp olive oil
- 1 tbsp of canned tomato
- Chopped parsley and coriander
- spices: ras el hanout, salt, black pepper, cumin, ginger
- Boiling water
Preparation steps
- 1. In a saucepan, the pieces of chicken with olive oil, then add the pieces of vegetables (carrot, courgette, onion, tomato) and let them fry for 5 to 10 minutes
- 2. Add the canned tomato and the spices then the chopped parsley and coriander
- 3. Add boiling water (about 3-4 glasses) and let the soup cook for 20-30 minutes
- 4. Add the red lentils and cook for 15 to 20 minutes
- 5. Remove the pan from the heat and mix all the ingredients with a blender
- 6. Serve the soup on a plate and add a spoonful of liquid cream if you want and enjoy
