Protein rice soup

This soup is prepared with rice, fresh vegetables, and protein sources, providing a balanced meal that supports your well-being while being incredibly tasty. Easy to prepare, it's perfect for a light yet complete dinner, ensuring you stay satisfied while meeting your nutritional goals.

Ingredients

  • 1 medium-sized chopped potato
  • 1 medium-sized grated courgette
  • 1 medium-sized carrot, grated or cut into small pieces
  • 1 glass of raw rice
  • Cinnamon
  • Olive oil or vegetable butter
  • Spices: black pepper, cinnamon, salt
  • Chicken bouillon cube - jumbo
  • Parsley
  • 1 egg yolk
  • 2 tbsp of lemon juice
  • Water

Preparation steps

  • 1. Cook the chicken pieces in a saucepan with 2 tbsp of olive oil or vegetable butter for 10 minutes
  • 2. Add the potato, the courgette and the carrot and let cook while stirring for 10 minutes then add the cinnamon, salt, and parsley
  • 3. Pour 3 to 4 glasses of boiling water and once the chicken is cooked add the glass of raw rice and cook over medium heat for 20 to 30 minutes
  • 4. In a container, mix the egg yolk, with a little bit of cinnamon, lemon, and a small amount of your soup
  • 5. Slowly add the egg yolk mixture to the soup while stirring, then add the parsley
  • 6. Cook for 5 to 10 minutes, then enjoy!
